The History of Ippudo Ramen 

Ippudo Ramen was founded in 1985 by Shigemi Kawahara, who was crowned the "Ramen King" in 2005. Now internationally renowned, the chain's first restaurant was located in Fukuoka, in the home of ramen: Japan. At that time, the restaurant was very small, with only 10 seats, and Ippudo Ramen was not very successful. In fact, it was only after the opening of the restaurant in Japan at the Yokohama Ramen Museum in 1994 that success began. Following this success, Ippudo Ramen began to consider expanding internationally, leading to the opening of its first restaurant abroad in New York in 2008. Since then, a large number of restaurants have opened, with more than 90 restaurants in Japan and 50 in the rest of the world, including three in Paris.

Atmosphere at Ippudo

When it comes to the Saint Germain des Prés restaurant in Paris's 6th arrondissement, you'll find the anthracite gray façade discreetly tucked away. Once inside, you'll discover a simple, minimalist decor, brightly lit and decorated in light beige tones.
The staff are always very pleasant and keen to introduce customers to ramen, so they are happy to help those who are less familiar with it by explaining the menu. Their smiles and generosity are evident both in their service and in the dishes they serve.

Dishes & ramen

The dishes at Ippudo Ramen live up to their reputation. IPPUDO wants to its authentic ramen known around the world, and it has succeeded.
The restaurant's best-seller is theAkamaru Tamago. A reinterpretation of tonkotsu soup, it is a broth made with chashu (rolled, braised, and finely sliced pork), kikurage mushrooms (black mushrooms with sesame), chives, umami sauce, and aromatic garlic oil called koyou oil.

There is also a vegetarian ramen option. vegetarian ramen : Veggies. Made with a tasty blend of mushroom and seasonal vegetable broth and topped with paprika noodles, you'll enjoy eringi mushrooms, beetroot, fennel, lamb's lettuce, and to top it all off: truffle oil.
Another of their specialties isHirata Buns. This small bun is actually melt-in-the-mouth gua bao bread, steamed and filled with marinated pork belly, salad, spicy sauce, and Japanese mayonnaise.
For starters, you can opt for gyozas , which are traditional Japanese dumplings
Finally, the ramen noodles is customized: you have to choose between yawa, futsu, kata, and bari kata. Yawa is the softest and bari kata is the firmest, but the waiters at Ippudo will be there to guide you.

Warning: due to its popularity, Ippudo Ramen is packed every evening and, as it does not take reservations, it is best to arrive early to avoid the long queue.
Prices generally range from €16 to €36. Expect to pay between €13 and €20 for ramen and between €4 and €10 for a starter.
